Pecan Strawberry Spinach Salad

Serves 6

Ingredients:

 

SALAD

1 cup baby spinach, chopped

1/2 cup romaine, chopped

1 lb fresh strawberries, sliced

1/3 red onion, thinly sliced

3/4 cup chopped pecans

 

DRESSING

1/2 cup balsamic vinegar

1/2 cup extra virgin olive oil

1 Tbsp dijon mustard

1 Tbsp pure maple syrup

sea salt & black pepper, to taste

*optional - plant-based feta cheese

 

Directions:

 

1.) Add the vinegar to a small saucepan and bring to a boil over medium heat. Allow it to boil until it is reduced by half. Pour into a jar or bowl, add the oil, mustard, syrup and whisk to blend while seasoning with salt and pepper. Thin with a little water if desired and set aside.

2.) In a large salad bowl, toss together all ingredients. Then drizzle about a 1/3 of the dressing over the salad then plate and drizzle the remaining over individual portions. 

3.) Garnish as desired and serve immediately.


This salad is the perfect combination of sweet and savory, with the fresh flavors of strawberries and spinach complemented by the tangy balsamic vinaigrette. It's also incredibly easy to make, with just a few simple ingredients that can be found at any grocery store. Give it a try for a quick and delicious meal that's perfect for springtime.
